Every morning, while most of Jaipur still slumbers, a small light flickers on at a humble corner shop on Chaura Rasta Road, Bapu Bazar. This is where Sahu’s day begins - or rather, where it seamlessly continues from the night before. For over 40 years, this modest establishment has set the standard for what mornings taste like in Jaipur.

The Handcart Legacy

"Dadaji ke paas sirf ek handcart aur ek sapna tha," recalls Anil Sahu, the third-generation owner of Sahu Chai.

In 1968, Ladhu Ram set up a small tea stall under a sprawling peepal tree in the heart of Jaipur with just three brass kettles and a secret recipe that would soon become legendary. Back then, a cup of tea cost just 20 paise—today, the same iconic chai is served in a kulhad for ₹20, carrying forward a rich tradition of authentic flavors.

The original handcart that started it all still stands proudly in their shop, serving as a powerful reminder of humble beginnings and a testament to a journey that turned a simple cup of chai into a cherished legacy.

Building on this foundation, Anil Sahu and Sanjay Sahu (MBA), representing the third generation of the Sahu Chai legacy, have taken bold steps to expand the family business. They have established cafes across Jaipur, where their famous chai is now served alongside a diverse menu of over 100 delicious food items and beverages. The Golden Ratio

What makes Sahu's chai extraordinary is their legendary milk-to-water ratio, known as the "Sahu Suvarna Anupaat" (Golden Ratio). Their unique 70:30 milk-to-water proportion, combined with a specific boiling time of exactly 7.5 minutes, creates what locals call "dudh me dooba hua chaipatti ka jadoo" (magic of tea leaves drowned in milk).

  • They exclusively use leaves from a specific tea garden in Darjeeling
  • The leaves are hand-picked during the second flush only
  • They maintain a traditional relationship with the same tea estate for three generations

Before Sahu's came along, Jaipur's morning chai culture was largely home-based. They revolutionized it by:

  • Introducing the concept of "Morning Walk Chai"

  • Establishing the "Subah Ki Sabha" - informal morning meetings of local influencers
