"Beta, chai mein pyaar daalte hain, bas yehi secret hai," chuckles Shivpal Singh Ji, the current owner and son of the legendary Gulab Ji. The story goes back to 1946, when Gulab Ji, armed with nothing but a brass kettle and an inherited recipe, set up his small wooden stall. Little did he know that his humble venture would become Jaipur's most beloved chai adda.

What makes Gulab Ji's chai special isn't just the ingredients – it's the ritual. Every morning at 4.30 AM, the preparation begins with selecting the perfect milk from local dairy farmers. The magic lies in their unique "double boiling" technique, where the milk is first boiled with carefully selected spices, then aged for exactly 40 minutes before being mixed with specially sourced Assam tea leaves.
"Har masale ka apna time hota hai," explains Shivpal, revealing how different spices are added at specific intervals. Their signature blend includes:
- Cardamom from Kerala's Idukki hills
- A special variety of black pepper from Malabar
- A secret mix of herbs that remains a closely guarded family secret

Today they have opened two new chai cafés in Bani Park and Mansarovar, crafted for modern Jaipur but rooted in tradition.

One of its most heartwarming traditions is "Neki ki Chai"—where customers can pay forward a cup of chai for students and those in need. Started by Gulab Ji himself, this gesture of kindness continues to this day.
